  • 2 T-bone steaks (1-inch thick)
  • 1/2 cup unsalted butter (melted)
  • 1 tablespoon lemon juice
  • 1 tablespoon minced garlic
  • 2 tablespoons minced shallot
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon prepared horseradish
  • Fresh herbs (parsley, chives, thyme)
  • Kosher salt and freshly ground black pepper

Instructions

  1. Make the cowboy butter by melting the butter in a saucepan over low heat. Stir in lemon juice, garlic, shallot, Dijon mustard, horseradish, red chile powder, and paprika until well combined.
  2. Add fresh herbs (parsley, chives, thyme) and season with salt and pepper. Keep warm while grilling.
  3. Pat the T-bone steaks dry and generously season with salt and pepper.
  4. Preheat your grill to 500°F (gas) or prepare charcoal until white-hot then reduce to 350°F.
  5. Grill steaks for about 4-5 minutes on one side until golden brown; flip and cook for another 3-5 minutes for medium rare (135°F).
  6. Let the steaks rest for 5 minutes before serving with cowboy butter on the side.
