  • 1 medium red bell pepper
  • ½ medium red onion
  • ½ bunch cilantro
  • 1 medium serrano pepper
  • Four 8-ounce portions Mahi Mahi
  • ½ cup butter
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Grill sliced pineapple until marked, then chop and combine with diced bell pepper, onion, cilantro, serrano pepper, salt, and pepper in a mixing bowl.
  2. Preheat the grill; mix melted butter, olive oil, lemon juice, garlic, cumin, salt, and pepper in another bowl. Brush this mixture on both sides of the Mahi Mahi fillets.
  3. Grill the fish for about 4-5 minutes per side until cooked through.
  4. Serve topped with pineapple salsa and garnish with parsley.
