  • 1 pound boneless skinless chicken breasts
  • 2 heads butter lettuce
  • 2 ripe peaches
  • 1 avocado
  • 23 Persian cucumbers
  • 2 ounces feta cheese (optional)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons dijon mustard
  • 2 tablespoons maple syrup
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a jar or bowl, mix balsamic vinegar, maple syrup, dijon mustard, olive oil, salt, and pepper. Add chicken to the marinade in a bag; seal and refrigerate for 1-4 hours.
  2. Preheat the grill to medium-high heat. Remove chicken from the marinade; grill for about 4-5 minutes on each side until cooked through (165°F internal temperature).
  3. Grill halved peaches alongside the chicken for about 3-4 minutes until caramelized.
  4. Allow chicken to rest before slicing. Assemble salad by layering torn lettuce with sliced chicken, peaches, avocado slices, cucumber, and feta if using.
