  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Juice of lemon
  • Salt & pepper to taste
  • 1 small head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, cubed
  • Fresh dill & mint (optional)
  • 1 cup Greek yogurt
  • 1 cucumber, grated & squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • Juice of lemon
  • Salt & pepper to taste

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, minced garlic, oregano, lemon juice, salt, and pepper. Add the chicken breasts and let them marinate while you prepare other ingredients.
  2. Cook the chicken: Heat a grill or skillet over medium-high heat. Cook the marinated chicken for 4-5 minutes on each side until golden brown and fully cooked. Let rest before slicing.
  3. Make the tzatziki: In another bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, salt, and pepper. Stir until smooth.
  4. Assemble the salad: Layer chopped romaine lettuce in bowls followed by cherry tomatoes, cucumber slices, sliced red onion, cubed feta cheese, and sliced chicken. Top with tzatziki.
