  • 4 large bell peppers
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a skillet over medium heat, melt the butter and sauté minced garlic until fragrant (about 1-2 minutes).
  4. Add shrimp to the skillet and cook until they turn pink (3-5 minutes). Remove from heat and chop into small pieces.
  5. In a mixing bowl, combine chopped shrimp with breadcrumbs, Parmesan cheese, salt, and pepper; stir until well mixed.
  6. Stuff each bell pepper with the shrimp mixture and place them upright in a baking dish.
  7. Bake for about 25-30 minutes until peppers are tender and slightly browned on top.
  8. Garnish with chopped parsley before serving.
