Ingredients

  • 10.5 cups water or organic unsalted vegetable broth
  • 1 yellow onion, peeled and halved
  • 2 celery ribs, cut in half
  • 3 carrots, peeled
  • 4 garlic cloves, peeled
  • Salt to taste
  • 1 cup pastina (or any small pasta shape)

Instructions

  1. In a large pot, heat water or vegetable broth over high heat. Add onion, celery, carrots, garlic, and salt. Bring to a boil.
  2. Reduce heat to medium-low, cover partially with a lid, and simmer for about 45 minutes until vegetables are soft.
  3. Use a slotted spoon to transfer veggies to a blender with two ladles of broth; blend until smooth. Return the mixture to the pot and stir well.
  4. In a separate pot of salted water, cook pastina according to package instructions.
  5. Serve by adding cooked pastina to bowls, pouring hot broth over it, and garnishing with grated cheese if desired.
