  • 1.25 lb boneless, skinless chicken breasts
  • 2 (14.5 oz) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup chopped yellow onion
  • 2 cloves garlic, chopped
  • 1 tsp salt
  • 1½ tsp dried oregano
  • ¾ tsp dried thyme
  • 1 tbsp ground cumin
  • Lemon wedges
  • Avocado slices
  • Greek yogurt
  • Chopped red onion
  • Fresh dill
  • Crumbled feta
  • Crushed red pepper flakes

Instructions

  1. Prep all ingredients by chopping onions and garlic, and rinsing the beans.
  2. In the crockpot, layer chicken breasts at the bottom followed by white beans, chicken broth, onion, garlic, salt, oregano, thyme, and cumin.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is fully cooked.
  4. Shred the chicken with two forks before returning it to the pot.
  5. Serve in bowls topped with lemon wedges, avocado slices, Greek yogurt, fresh dill, crumbled feta cheese, and crushed red pepper flakes as desired.
