  • 2 boneless skinless chicken breasts
  • 3/4 cup pineapple juice
  • 1/3 cup teriyaki sauce
  • 2 tablespoon chopped cilantro
  • 1/4 cup minced red onion
  • 2 tablespoon honey
  • 2 tablespoon olive oil
  • 2 tablespoon brown sugar
  • 1 tablespoon chopped garlic
  • Salt and pepper to taste
  • About 4 cups assorted vegetables (bell peppers, red onions)
  • Canned pineapple chunks

Instructions

  1. Cut chicken into chunks and place them in a container.
  2. In a mixing bowl, combine pineapple juice, teriyaki sauce, chopped cilantro, minced red onion, honey, olive oil, brown sugar, garlic, salt, and pepper to create the marinade.
  3. Pour the marinade over the chicken, seal the container, and refrigerate for at least 30 minutes.
  4. Soak bamboo skewers in water for 30 minutes.
  5. Thread marinated chicken pieces, pineapple chunks, and vegetables onto soaked skewers.
  6. Preheat the grill and cook kabobs for 5-7 minutes on each side until chicken is cooked through (internal temp of 165°F).
  7. Serve hot off the grill.
