  • 12 button mushrooms (cleaned, stems removed)
  • 1/4 pound chicken sausage (bulk)
  • 1/2 small sweet onion (diced)
  • 1 jalapeno pepper (diced, seeds removed)
  • 1/4 teaspoon New Mexico chile powder
  • 1/2 teaspoon cumin
  • 1 tablespoon olive oil
  • 2 tablespoons cornmeal
  • 1/2 cup Pepper Jack cheese (shredded)

Instructions

  1. Clean the mushroom caps with a damp paper towel.
  2. In a fry pan over medium heat, cook the chicken sausage until nearly done. Add diced onion and jalapeno; sauté for about 3 minutes.
  3. Stir in chile powder, cumin, and salt; allow to cool slightly before handling.
  4. Arrange mushroom caps on a sheet pan and drizzle with olive oil.
  5. Fill each cap with the sausage mixture; sprinkle cornmeal and cheese on top.
  6. Bake in a preheated oven at 400°F (200°C) for 15–20 minutes until the cheese is bubbly and mushrooms are tender.
