  • 1 red onion, sliced into thin rounds
  • 4 to 5 medium Yukon Gold potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 4 slices cheddar cheese
  • 1 teaspoon garlic powder
  • Sea salt and pepper, to taste
  • 4 12-inch sheets of heavy duty aluminum foil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced potatoes with olive oil.
  3. Lay out four sheets of heavy-duty aluminum foil and divide the potatoes among them.
  4. Top each potato portion with a slice of red onion and place a chicken patty on top.

  6. Bake for about 35 minutes until chicken reaches an internal temperature of 160°F to 165°F.
