  • 4 vine-ripened tomatoes, diced
  • 1/2 small red onion, diced
  • 2 tbsp fresh basil, chopped
  • 1 clove garlic, minced
  • 1/2 tsp oregano
  • 1/4 tsp fine sea salt, more or less to taste
  • 1/4 tsp black pepper
  • 5 tbsp extra-virgin olive oil, divided
  • 500 g spaghetti pasta
  • 3 tbsp balsamic vinegar glaze, optional

Instructions

  1. Cook the pasta: In a large pot of salted boiling water, cook the spaghetti until al dente according to package directions. Drain and set aside.
  2. Prepare the bruschetta mixture: In a medium bowl, combine diced tomatoes, red onion, chopped basil, minced garlic, oregano, salt, pepper, and 3 tablespoons of olive oil. Stir and let marinate for 10-15 minutes.
  3. Combine: In a large heatproof serving bowl or skillet, toss the drained pasta with 2 tablespoons of olive oil and the bruschetta mixture until well combined. Adjust seasoning if necessary. Drizzle with balsamic glaze if desired and garnish with additional basil before serving.
