  • 6 oz. cream cheese (room temperature)
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon corn starch
  • 3/4 cup powdered sugar
  • 1 1/22 1/2 teaspoons milk or cream

Instructions

  1. Preheat oven to 425°F (220°C) and prepare a muffin pan with liners.
  2. In a bowl, mix together flour, brown sugar, and salt for the streusel topping; add melted butter until crumbs form.
  3. In another bowl, blend cream cheese, sugar, cornstarch, and vanilla for the filling.
  4. In a large bowl, whisk together flour, baking powder, and salt for the muffins.
  5. In a separate bowl, combine egg and sugar; whisk in yogurt, oil, and vanilla until smooth.
  6. Fold wet ingredients into dry ingredients gently; add berries carefully.
  7. Fill muffin cups partially with batter, add cream cheese filling and top with remaining batter and streusel crumbs.
  8. Bake at 350°F (175°C) for 30–35 minutes until golden.
