  • 1 cup mashed ripe bananas (about 2 large)
  • 1 cup sugar
  • 1/2 cup butter (softened)
  • 2 large eggs
  • 1 1/4 cups sour cream
  • 8 ounces cream cheese (softened)
  • 1/2 cup walnuts (chopped)
  • Semi-sweet chocolate chips (optional)
  • 1/2 cup brown sugar, packed
  • 1/2 tablespoon cinnamon
  • 4 tablespoons cold butter, cubed
  • 1 1/4 teaspoons baking powder
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F and prepare a nonstick angel food cake pan.
  2. For the streusel, pulse walnuts, flour, brown sugar, and cinnamon in a food processor; add cold butter until crumbly. Refrigerate.
  3. In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  4. Beat softened butter and sugar until fluffy; add eggs one at a time. Mix in bananas and vanilla.
  5. Gradually add dry ingredients alternating with sour cream until just combined. Stir in optional chocolate chips and walnuts.
  6. Reserve some batter for the cream cheese filling; spoon remaining into the pan.
  7. For the filling: mix reserved batter with cream cheese and sugar until smooth; layer on top of the batter.
  8. Spread reserved batter over filling; top with streusel.
  9. Bake for 55–60 minutes or until a toothpick comes out clean from the cake part.
  10. Allow to cool before inverting onto a cooling rack.
