  • 1 lb fettuccine
  • ¼ cup extra virgin olive oil
  • 1 small onion (quartered and sliced)
  • 1 lb fresh asparagus (cut into inch pieces)
  • 3 cloves garlic (minced)
  • ¼½ teaspoon red pepper flakes (to taste)
  • ⅓ cup grated fresh Parmesan cheese
  • 810 fresh basil leaves
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoons lemon zest
  • Salt and pepper (to taste)

Instructions

  1. Cook the fettuccine in a large pot of boiling water until al dente, reserving ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat and sauté the onion for about 5 minutes until browned. Add the asparagus and cook for an additional 2-3 minutes until crisp-tender. Stir in minced garlic and remove from heat.
  3. In a large bowl, combine the cooked pasta with sautéed vegetables, remaining olive oil, red pepper flakes, Parmesan cheese, basil, thyme, lemon zest, salt, and pepper. Toss thoroughly to combine.
