Indulge in the comforting and cheesy delight of Zucchini Ricotta Melts with Marinara, a veggie-packed dish perfect for any occasion. This layered casserole features tender zucchini slices generously slathered with creamy ricotta cheese and vibrant marinara sauce, all topped with melty mozzarella.

Ingredients

  • 2 medium zucchini
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 cup marinara sauce
  • 1 tsp dried oregano
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 190C (375F) and lightly grease a baking dish.
  2. Slice zucchini lengthwise and place them in a single layer at the bottom of the baking dish. Sprinkle with oregano.
  3. Spread half of the ricotta over the zucchini followed by half of the marinara sauce. Repeat with remaining ingredients.
  4. Top with shredded mozzarella cheese.
  5. Cover with aluminum foil and bake for 25–30 minutes. Remove foil and bake for an additional 10–15 minutes until golden and bubbly.
  6. Allow to cool slightly before serving, garnished with fresh basil.
