Zucchini Pizza is a delightful summer dish that showcases a medley of fresh vegetables and vibrant flavors. This unique pizza features roasted pattypan squash, marinated zucchini strips, creamy mozzarella, and aromatic basil, all layered on a crispy homemade crust.

  • 1 pound fresh pizza dough
  • 4 tiny pattypan squash, cut into 1-inch pieces
  • 8 tiny zucchini, peeled into strips
  • ½ garlic clove, minced
  • 1 (8-ounce) ball fresh mozzarella
  • ⅓ cup fresh pesto
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Stretch the pizza dough onto a 14-inch pizza pan and par-bake for about 3 minutes.
  3. Toss pattypan squash with olive oil, minced garlic, salt, and pepper.
  4. Remove the crust from the oven; brush with olive oil and sprinkle with salt.
  5. Spread torn mozzarella pieces over the crust followed by the prepared pattypan squash.
  6. Bake for approximately 12 minutes until the edges are golden brown.
  7. In the meantime, toss zucchini strips with olive oil, lemon juice, thyme leaves, salt, and pepper; set aside to marinate.
  8. After baking, top the pizza with marinated zucchini strips, pesto dollops, and fresh basil leaves.
  9. Drizzle with olive oil and red pepper flakes before slicing.
