  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup salsa verde
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cooked white or brown rice
  • ¼ cup fresh cilantro, chopped
  • 1 cup low-sodium chicken broth
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 9×13 inch baking dish with nonstick spray.
  2. In a large skillet over medium heat, heat olive oil. Season chicken with salt and pepper; cook for about 5-7 minutes per side until golden brown and cooked through. Let cool slightly before shredding.
  3. In a bowl, mix shredded chicken, black beans, cooked rice, half of the salsa verde, and half of the cheese until combined.
  4. Layer half of the mixture in the prepared dish; drizzle with more salsa verde. Add remaining mixture on top and sprinkle with the remaining cheese.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake another 10-15 minutes until bubbly and golden.
  6. Garnish with chopped cilantro before serving.
