  • 200g udon noodles
  • 100g shrimp
  • 1 garlic clove (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut matchstick-style)
  • 1 spring onion (chopped)
  • 2 tbsp neutral oil
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
  • 1/3 tsp freshly crushed black pepper
  • 2 tsp toasted sesame oil
  • pinch salt
  • pinch pepper

Instructions

  1. Boil the udon noodles according to package instructions. Drain, rinse with cold water, and drizzle with oil to prevent sticking.
  2. In a wok over medium-high heat, sauté minced garlic in neutral oil until fragrant. Add mushrooms, then onions and carrots; stir-fry for about 2-3 minutes.
  3. In the same pan, add more oil and cook shrimp until pink. Drizzle in soy sauce and season lightly.
  4. Add boiled udon noodles to the pan, stir-frying on high heat until slightly crispy.
  5. Pour in your sauce mixture while tossing in the sautéed vegetables until evenly combined.
