  • 2 chicken breasts
  • 1 oz taco seasoning
  • 1 oz ranch seasoning mix
  • 15 oz canned black beans
  • 15 oz canned corn
  • 10 oz canned Rotel tomatoes with green chiles
  • 8 oz cream cheese

Instructions

  1. Place trimmed chicken breasts in the bottom of the Crock Pot.
  2. Add undrained black beans, corn, and Rotel tomatoes on top.
  3. Sprinkle taco seasoning and ranch seasoning evenly over the ingredients.
  4. Place cream cheese on top without mixing.
  5. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  6. Once cooked, shred chicken with two forks and stir well to combine all ingredients.
  7. Serve in bowls topped with tortilla strips, shredded cheese, sliced avocados, fresh lime juice, and chopped cilantro.
