  • 8 boneless, skinless chicken breasts
  • 1/2 cup extra virgin olive oil
  • 1/3 cup fresh-squeezed lemon juice
  • 1 tsp fresh lemon zest
  • 1 tsp Greek seasoning
  • 1 tsp poultry seasoning
  • 1 tsp dried oregano
  • Black pepper to taste

Instructions

  1. Trim visible fat from chicken breasts and make small crosswise slits down each breast.
  2. In a Ziploc bag, combine olive oil, lemon juice, lemon zest, Greek seasoning, poultry seasoning, oregano, and black pepper. Add chicken and marinate in the refrigerator for 6-8 hours or overnight.
  3. Preheat grill to medium-high heat. Drain chicken and bring it to room temperature.
  4. Grill chicken for about 4 minutes per side until cooked through (internal temperature of 165F/75C).
  5. Allow to rest for a few minutes before serving.
