  • 1 13.5 oz can of coconut cream (solid parts only)
  • 1/2 cup coconut milk (can sub any other milk)
  • 1/2 cup almond butter (can sub any other nut or seed butter)
  • 1/4 cup coconut sugar (can sub maple syrup or any other sugar)
  • 1 cup medjool dates (pitted)
  • 1/4 cup creamy almond butter
  • 2 tbsp coconut milk
  • 1 tsp vanilla
  • 1/2 cup peanuts (dry roasted and salted)
  • 1 cup dark chocolate chips (melted with 2 tsp coconut oil)

Instructions

  1. Blend coconut cream, coconut milk, almond butter, and coconut sugar until smooth.
  2. Pour into silicone molds and freeze for 2 hours.
  3. Prepare date caramel by blending medjool dates, almond butter, coconut milk, and vanilla until creamy.
  4. Spread date caramel over frozen ice cream bars and top with pressed peanuts.
  5. Melt dark chocolate chips with coconut oil; coat each bar in chocolate.
  6. Freeze again until firm (about 20 minutes). Enjoy!
