  • 1¾ cups milk
  • ½ cup water
  • 3 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1½ cups heavy cream
  • ½ cup speculoos cookie butter
  • ¼ cup powdered sugar

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, water, melted butter, vanilla extract, and salt until smooth. Chill for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat and pour in batter to make crêpes. Cook until golden brown on both sides and cool completely.
  3. In another bowl, beat together speculoos cookie butter, powdered sugar, and vanilla extract. Fold in heavy cream until light and fluffy.
  4. Layer cooled crêpes with filling on a serving plate until all are stacked. Chill in the refrigerator for at least 2 hours before serving.
