  • 1/2 cup cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer or using a hand mixer, cream cold butter with light brown and granulated sugar until creamy.
  4. Add in the cold egg and vanilla extract; mix until combined.
  5. Gradually mix in the dry ingredients along with chopped semi-sweet chocolate, one cup of chocolate chips, and walnuts until just combined.
  6. Using a large cookie scoop, portion out dough onto prepared cookie sheets and press remaining chocolate chips on top.
  7. Bake for 12-13 minutes or until edges are golden brown. Cool for five minutes on sheets before transferring to a wire rack.
