  • 2 lbs beef chuck, cut into 1.5-inch cubes

  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season beef with salt and pepper; sear until browned on all sides (about 5-7 minutes). Remove and set aside.
  2. In the same pot, cook onions until translucent (4-5 minutes). Add garlic; sauté for an additional minute.
  3. Stir in carrots and celery; sauté for another 5 minutes.
  4. Mix in tomato paste; cook for 2 minutes. Add diced tomatoes with juices, apple vinegar, and beef stock; stir well.
  5. Return the browned beef to the pot. Bring to a gentle simmer; stir in rosemary.
  6. Cover and reduce heat to low; slow-braise for about 2-3 hours until beef is tender.
