  • 3/4 cup water
  • 23 cups chopped/sliced tomatoes
  • 15 oz can chickpeas (drained and rinsed)
  • 1/4 cup chopped green onion
  • 1/4 cup fresh lime juice
  • 2 tablespoons avocado oil
  • 1 clove garlic (minced)
  • Fresh parsley (for garnish)

Instructions

  1. Rinse quinoa under cold water using a mesh strainer to remove bitterness.
  2. In a small pot, toast quinoa over medium heat for a few minutes until slightly nutty.
  3. Add water to the pot, bring to a boil, then reduce heat and simmer covered for 12-13 minutes until fluffy.
  4. While quinoa cooks, chop tomatoes and green onions.
  5. Mix avocado oil, lime juice, minced garlic, parsley, cumin, salt, and pepper in a bowl to create dressing.
  6. Fluff cooked quinoa with a fork; let it cool slightly before combining with tomatoes, chickpeas, green onions, and parsley.
  7. Toss everything with half the dressing; serve immediately or store in meal prep containers.
