  • 3/4 cup light coconut milk
  • 1/2 cup sweet chili sauce (plus extra for dipping)
  • Juice of 1 lime
  • 8 cups cauliflower rice
  • 1/4 cup fresh cilantro (chopped)
  • Coconut oil for sautéing

Instructions

  1. Marinate the chicken in a mixture of coconut milk, sweet chili sauce, lime juice, salt, and pepper in a Ziplock bag for 30 minutes to 1 hour.
  2. Preheat the grill to medium-high heat and grease the grates.
  3. Grill the marinated chicken for about 4-5 minutes on one side, then flip and cook an additional 3-4 minutes until fully cooked.
  4. In a skillet, heat coconut oil and sauté cauliflower rice seasoned with salt and pepper until tender (5-7 minutes). Stir in lime juice and chopped cilantro before serving.
  5. Serve grilled chicken over cauliflower rice with extra sweet chili sauce on the side.
