  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 large eggs
  • 1 cup marinara sauce (plus more for topping)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, shredded
  • Optional: sliced turkey pepperoni or turkey slices for stuffing

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté the chopped onions and garlic until translucent (about 5 minutes) and set aside.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, basil, sautéed onion and garlic. Add eggs and marinara sauce along with Italian seasoning, salt, and pepper; mix gently.
  4. Shape the mixture into a rectangle on parchment paper. Spread shredded mozzarella over the top and optionally add turkey slices for stuffing.
  5. Roll the meatloaf using parchment paper to enclose the filling completely. Place seam-side down on the baking sheet.
  6. Top with additional marinara sauce and bake for about 60 minutes or until internal temperature reaches 160°F (70°C).
  7. Allow resting for 15-20 minutes before slicing.
