  • 4 medium bell peppers (any color)
  • 2 tablespoons extra virgin olive oil
  • 1 large onion (chopped)
  • 3 cloves garlic (grated)
  • 1½ teaspoons ground coriander (or ground cumin)
  • 1 teaspoon turmeric
  • ¼ teaspoon red pepper flakes
  • 1 cup rice
  • 1 can (15 ounces) lentils (drained)
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 cups vegetable broth
  • ½ cup Italian parsley (chopped)
  • 4 wedges lemon

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in the rice, garlic, spices, and sauté briefly. Add vegetable broth, lentils, diced tomatoes, salt, and pepper. Simmer for about 10 minutes until rice is half-cooked. Mix in chopped parsley.
  3. Preheat the oven to 350°F (180°C). Halve the bell peppers lengthwise, remove seeds, sprinkle with salt, then fill with the mixture.
  4. Place stuffed peppers in a baking dish covered loosely with foil and bake for about 40 minutes until tender.
