  • ½ cup heavy whipping cream
  • 2 (8-ounce) blocks cream cheese (room temperature)
  • ⅓ cup granulated sugar
  • 2 teaspoons lemon juice
  • ½ teaspoon vanilla extract
  • 1 pound fresh strawberries (hulled and sliced)
  • 1 tablespoon red currant jam (or apricot, or strawberry)
  • ½ teaspoon water

Instructions

  1. In a food processor, combine flour, sugar, and salt. Add cold butter and process until crumbly. Gradually add ice water until dough comes together.
  2. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least one hour.
  3. Preheat oven to 400°F (200°C). Roll out the chilled dough into a 13-inch circle and place it in a tart pan.
  4. Blind bake the crust lined with parchment paper and weights for 20 minutes; then remove weights and bake for another 5-8 minutes until golden.
