  • 1 cup whole milk
  • 1 cup vegetable oil
  • 1 cup mashed fresh strawberries
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 box white cake mix (15.25 oz)
  • 1 box strawberry-flavored vegan gelatin (3 oz)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 23 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream (cold)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three round cake pans.
  2. In a large bowl, mix the cake mix with mashed strawberries.
  3. Add eggs, milk, oil, sour cream, and vanilla; beat until smooth.
  4. Divide batter into prepared pans and bake for 22-28 minutes or until a toothpick comes out clean.
  5. For the frosting, beat together softened cream cheese and butter until smooth; add powdered sugar and vanilla gradually, then whip in cold heavy cream until fluffy.
  6. Once cakes are cool, frost between layers and on top.
