  • ¼ tsp baking soda
  • ½ tsp kosher salt
  • 1 tsp ground cinnamon
  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed ripe bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C) and spray your baking dish with nonstick spray.
  2. In a large bowl, cream together the granulated sugar, brown sugar, and butter until fluffy. Add eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas; mix until combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to wet ingredients; stir until just combined.
  5. Pour batter into the prepared dish and bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  6. For the toffee sauce: melt butter with brown sugar over medium-low heat for about 10 minutes; stir in heavy cream and vanilla extract for another 5 minutes.
  7. Once the cake cools slightly, poke holes in its top with a toothpick and pour toffee sauce over it. Let soak for at least one hour before serving.
