  • 3 large eggs
  • 2 cups cottage cheese
  • 10 ounces frozen chopped spinach (thawed and drained)
  • 1/3 cup crumbled feta cheese
  • 1/3 cup diced sweet onion
  • 1/4 cup melted butter
  • 2 tablespoons grated Parmesan cheese
  • black pepper
  • garlic powder
  • nutmeg

Instructions

  1. Preheat your oven to 350°F.
  2. Grease a 1 & 1/2-quart casserole dish.
  3. In a mixing bowl, combine beaten eggs, cottage cheese, drained spinach, feta, onion, melted butter, Parmesan, black pepper, garlic powder, and nutmeg until mixed well.
  4. Pour the mixture into the greased casserole dish and spread it evenly.
  5. Bake uncovered for 40–45 minutes or until the center is nearly set.
  6. Let cool for 5–10 minutes before cutting into squares and serving warm.
