  • 2 cups corn kernels (fresh, frozen, or canned)
  • ½ cup Cotija cheese
  • ½ cup cheddar cheese
  • 4 ounces cream cheese
  • 1 small jalapeño
  • ¼ cup green onion
  • 1 tablespoon lime juice
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup flour

Instructions

  1. In a mixing bowl, combine corn, Cotija cheese, cheddar cheese, cream cheese, chopped jalapeño, green onions, lime juice, egg, breadcrumbs, flour, chili powder, cumin, salt, and pepper. Mix until well combined.
  2. Chill the mixture for 15 minutes to help it hold shape.
  3. Shape into balls (about 1 tablespoon each) and place on a baking sheet.
  4. Dip each ball in beaten egg and coat with breadcrumbs.
  5. Bake at 375°F (190°C) for 18-20 minutes or air-fry at the same temperature for 10-12 minutes until golden brown.
