  • 1 onion
  • 1 cup chopped carrots
  • 1 cup sliced celery
  • 3 cloves garlic
  • 1 can diced tomatoes
  • 3 cups water
  • 2 beef bouillon cubes
  • 1 can kidney beans
  • 1 can northern beans
  • 8 oz ditalini pasta
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp thyme
  • 1/2 cup apple juice
  • salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess fat.
  2. In your slow cooker, combine browned beef, diced onion, carrots, celery, minced garlic, diced tomatoes, water, and bouillon cubes.
  3. Add kidney beans, northern beans, oregano, basil, thyme, apple juice, salt, and pepper. Stir well to combine.
  4. Cover and cook on low for 6-8 hours.
  5. About 15 minutes before serving, boil water in a large pot and cook ditalini pasta until al dente; drain.
  6. Stir cooked pasta into the slow cooker and let it sit for another 15 minutes before serving.
