  • 1 yellow onion (chopped)
  • 1 ½ cups carrots (chopped)
  • 1 ½ cups celery (chopped)
  • ¼ cup fresh parsley leaves (chopped)
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 cup chicken stock
  • 2 cans cream of chicken condensed soup
  • 34 boneless skinless chicken breasts (about 2 pounds)
  • 1 ½ cups frozen peas
  • 1 can corn (drained)
  • Refrigerated biscuits (for serving)

Instructions

  1. Chop the onion, carrots, celery, and parsley.
  2. In a slow cooker, combine the chopped vegetables, seasonings, chicken stock, and cream of chicken soup. Stir until mixed.
  3. Place chicken breasts in the mixture and cover them with some of the vegetables.
  4. Cover and cook on low for 8 hours.
  5. Shred cooked chicken using forks and return it to the slow cooker along with peas and corn about 30 minutes before serving.
  6. Stir well and let finish cooking until heated through.
  7. Serve topped with warm baked biscuits.
