  • 2 lbs ground beef
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • Marinara sauce (for serving)
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. Sauté the chopped onion and bell pepper in olive oil until soft; add garlic and cook briefly.
  3. 3. In a large mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, black pepper, parsley, and sautéed vegetables. Mix gently until well combined.
  4. 4. On parchment paper, form the meat mixture into a rectangle. Layer with deli chicken slices (or alternative), basil leaves, and mozzarella cheese.
  5. 5. Roll tightly using the parchment paper as a guide and seal the edges.
  6. 6. Place on a lined baking sheet and bake for 1 hour. Let rest for 10 minutes before slicing.
