  • 2 cloves garlic
  • 1 ½ cups red enchilada sauce
  • 810 corn or flour tortillas
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, sauté the chopped onion and minced garlic until translucent. Stir in the red enchilada sauce, cumin, chili powder, and smoked paprika; simmer for 2-3 minutes.
  3. Combine the shredded chicken with the sauce ensuring it's well-coated.
  4. Grease a baking dish and layer tortillas at the bottom. Spoon half of the chicken mixture over tortillas, followed by a sprinkle of cheese. Repeat layers finishing with cheese on top.
