  • 1 1/2 lbs rainbow carrots
  • 1/4 cup scallions
  • 2 tbsp fresh cilantro
  • 2 tbsp fresh basil
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 2 tbsp low sodium Tamari or soy sauce
  • 1 tbsp white miso
  • 1 tsp sriracha
  • 1 tsp coconut sugar
  • 1 clove garlic
  • 1 tsp ginger

Instructions

  1. Toast sesame seeds in a pan over medium heat until golden, about 5–7 minutes. Set aside to cool.
  2. Julienne the rainbow carrots using a knife or food processor and place them in a large bowl.
  3. Add chopped scallions, cilantro, and basil to the carrots; toss gently.
  4. In a blender, combine dressing ingredients and blend until smooth.
  5. Pour the dressing over the carrot mixture and toss to coat evenly.
  6. Refrigerate for at least one hour before serving to meld flavors.
