  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cups low-sodium beef broth
  • 2 cloves garlic, minced
  • 1 ½ cups Gruyère cheese, shredded
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Melt butter in a skillet over medium heat; add sliced onions and sauté until golden brown.
  3. Stir in minced garlic and thyme; cook until fragrant.
  4. Layer half of the potatoes in the baking dish, followed by half of the onion mixture. Repeat with remaining potatoes and onions.
  5. Pour beef broth evenly over layers and top with Gruyère cheese.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  7. Allow to rest for 10 minutes before serving.
