Instructions

  2. In a large soup pot over medium-high heat, sear sliced beef smoked sausage until browned.
  3. Add diced onion along with Italian seasoning and black pepper; sauté until softened.
  4. Incorporate garlic and cook until fragrant before adding diced potatoes and chicken broth.
  5. Cover and simmer for about 12 minutes before stirring in navy beans.
  6. Continue to simmer until potatoes are tender.
  7. Turn off heat, stir in chopped kale, parsley, and a squeeze of lemon juice before serving.
