  • 1 whole or half bone-in turkey breast (or boneless)
  • ½ cup unsalted butter, softened
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 3 cloves garlic, minced
  • 1 ½ teaspoons fresh thyme, chopped
  • 1 ½ teaspoons fresh rosemary, chopped
  • ½ teaspoon fresh sage, chopped

Instructions

  1. If frozen, thaw the turkey breast in the refrigerator (allowing 24 hours for every 5 pounds).
  2. Remove the turkey from the fridge to reach room temperature about 20 minutes before cooking.
  3. Preheat the oven to 325°F (165°C).
  4. In a mixing bowl, combine softened butter with garlic, salt, pepper, thyme, rosemary, and sage until smooth.
  5. Pat the turkey breast dry and season it lightly with additional salt and pepper.
  6. Loosen the skin gently and spread herb butter underneath and on the outside of the turkey.
  7. Place the seasoned turkey in a roasting pan.
  8. Roast at 325°F (165°C) for approximately 14–15 minutes per pound until reaching an internal temperature of 165°F (74°C).
  9. Let rest covered loosely with aluminum foil for at least 15 minutes before carving.
