  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic by cutting off the top of the head, drizzling with olive oil, seasoning with salt, wrapping in foil, and baking for about 30 minutes until golden.
  3. Grease a 9×13-inch baking dish with butter.
  4. Thinly slice the potatoes using a mandoline slicer.
  5. Layer the potato slices upright in the baking dish until all are used up.
  6. In a saucepan, combine cream, milk, butter, half of the grated parmesan cheese, thyme, nutmeg, salt, and pepper over medium heat until blended.
  7. Squeeze out garlic cloves from their skins after roasting and mash them into a paste; stir into the cream mixture.
  8. Pour the cream mixture evenly over the layered potatoes and cover tightly with foil.
  9. Bake covered for 40 minutes; then remove foil and add remaining cheeses on top.
  10. Bake uncovered for an additional 30 minutes until bubbly and golden brown.
  11. Allow to cool slightly before serving; garnish with fresh chives.
