  • 2 cups fresh raspberries
  • ½ cup granulated sugar
  • ½ cup + 2 tablespoons water (divided)
  • 1 teaspoon lemon juice
  • 2 tablespoons cornstarch

Instructions

  1. In a small saucepan, combine raspberries, sugar, ½ cup water, and lemon juice. Heat over low-medium heat until it reaches a low boil.
  2. In a small bowl, mix cornstarch with the remaining 2 tablespoons of water until smooth.
  3. Gradually whisk the cornstarch mixture into the raspberry mixture. Cook for an additional 3-5 minutes or until thickened to your desired consistency.
  4. Remove from heat and allow to cool completely before transferring to an airtight container.
