  • 1 avocado, sliced
  • 1 medium carrot, peeled and julienned
  • 45 cherry tomatoes
  • 68 cucumber slices
  • 2 tbsp red cabbage sauerkraut
  • 2 tbsp white sauerkraut
  • Salt and pepper to taste
  • 1 tsp olive oil or butter for frying

Instructions

  1. Heat olive oil or butter in a nonstick frying pan over medium heat.
  2. Crack the eggs gently into the pan, cooking until the whites are set but yolks remain runny. Season with salt and pepper.
  3. Slice cucumber and avocado, julienne the carrot, and rinse cherry tomatoes.
  4. On a serving plate, arrange all vegetables around the edge, place sauerkraut in between, and add sunny-side-up eggs in the center.
  5. Drizzle with additional olive oil or sprinkle more cracked pepper if desired.
