  • 375 g Puff Pastry Sheet (ready rolled)
  • 400 g Mincemeat
  • 40 g Dried Cranberries
  • Zest from 1 Clementine
  • 1 Egg (beaten)
  • 1 tbsp Icing Sugar

Instructions

  1. Preheat your oven to 200°C (180°C fan/Gas 6) and line two baking sheets with baking paper.
  2. Unroll the puff pastry on a clean surface, spreading an even layer of mincemeat over it while leaving a gap along the edges.
  3. Scatter dried cranberries evenly and zest the clementine over the filling.
  4. Roll the pastry tightly into a log shape, using baking paper to assist if needed.
  5. Chill the rolled pastry in the fridge for about 15 minutes (optional) before slicing into 2 cm thick pieces.
  6. Place slices on baking sheets, brush each with beaten egg, and bake for 15-17 minutes until golden brown.
  7. Let cool slightly before dusting with icing sugar and serving.
