  • 2 ounces cream cheese
  • 1 cup sugar
  • 1 tablespoon corn syrup
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 Pop Tarts (divided)
  • Optional: food coloring and sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a stand mixer, combine softened butter and cream cheese until smooth. Add sugar and corn syrup; mix until fluffy. Stir in the egg.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually combine this dry mixture into the creamy base until just mixed.
  4. Chop six Pop Tarts and fold them into the dough.
  5. Scoop dough onto a parchment-lined baking sheet, flattening each scoop slightly.
  6. Chop the remaining two Pop Tarts and press pieces into the tops of each cookie.
  7. Bake for 10-12 minutes until edges are golden but centers remain soft.
