  • 3 pounds boneless skinless chicken thighs (or boneless skinless chicken breasts sliced in half lengthwise)
  • 2 tsp olive oil
  • 45 tbsp water (for pan frying cooking method, optional)
  • 1 can chipotle peppers in adobo sauce (7 oz can)
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion (quartered)
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. In a mixing bowl, whisk together chipotle peppers, lime juice, orange juice, cilantro, garlic cloves, onion, cumin, oregano, coriander, smoked paprika, salt, and pepper.
  2. Place chicken in a zip-top bag or shallow dish and pour the marinade over it. Seal or cover and marinate in the refrigerator for at least 30 minutes to overnight.
  3. Preheat a cast iron skillet or grill pan over medium-high heat with olive oil. Remove chicken from marinade and discard the marinade.
  4. Cook chicken for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F).
  5. Let the chicken rest for a few minutes before slicing; serve warm with your choice of sides.
