  • 12 oz ribeye steak (thinly sliced)
  • 2 tbsp olive oil
  • 2 small green bell peppers (sliced)
  • 1 large white onion (sliced)
  • 2 cloves garlic (minced)
  • 6 oz provolone cheese (shredded or sliced)
  • 4 medium flour tortillas
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Freeze the ribeye steak for 30 minutes for easier slicing. Thinly slice against the grain.
  2. Heat 1 tbsp olive oil in a skillet over medium-high heat. Sauté onions and bell peppers until softened; set aside.
  3. In the same skillet, add remaining olive oil and cook the steak for 2-3 minutes until nearly cooked through. Stir in garlic and return the vegetables.
  4. Top with provolone cheese, cover until melted (about 1 minute).
