  • 1/2 cup smooth peanut butter
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats
  • 1 cup chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (180°C) and line your baking sheets with parchment paper.
  2. In a mixing bowl, beat together softened butter, brown sugar, granulated sugar, and peanut butter until creamy. Add egg and vanilla extract; mix until combined.
  3. Gradually add flour, baking powder, baking soda, and salt; mix until just blended.
  4. Stir in old-fashioned oats and 3/4 cup of chocolate chips by hand. Reserve remaining chocolate chips for topping.
  5. Form dough into balls using a cookie scoop or two tablespoons (about 3 tablespoons each). Chill if sticky.
  6. Space dough balls 2-3 inches apart on prepared sheets and bake for 10-12 minutes until tops look set.
  7. Let cool on sheets for 10 minutes before transferring to wire racks.
