  • 1 1/2 cups mashed banana (about 3 or 4 overripe bananas)
  • Optional: 1/2 to 2/3 cups chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9" x 5" loaf pan or line it with parchment paper.
  2. In a mixing bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. Using an electric mixer, beat the softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix well after each addition, then incorporate vanilla.
  4. Gradually add the flour mixture alternately with sour cream until just combined; do not overmix.
  5. Gently fold in the mashed bananas and optional nuts.
  6. Pour the batter into the prepared loaf pan and bake for about 50 to 55 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
